We decided to make Mozzarella so went to a farm for the raw milk, an adventure in itself for city kids. I was a bit disappointed that the 4 litres of milk produced such a small amount of curd, so I guess something went wrong with my method. The curd wasn't nearly as stretchy as we expected. However we made pizzas the following day and used the cheese which was certainly edible but not very stretchy. My conclusion was that I should have made a batch of cheese myself before attempting to do it with the children.
